Chicken Bacon Ranch Casserole

Howdy, I'm back with a vengeance. I have been super busy with moving to my new place in Houston, TX! I will be starting work for Chevron tomorrow. However, I still found time to tackle this awesome recipe.

Let me first say... this dish is awesome. Its simple, its fairly easy, and its SOOOOO delicious. It went extremely well with a side salad with Balsamic Vinaigrette and some Pillsbury crescent rolls. This recipie actually made two casserole dishes worth of stuff so I will be having it for lunch for the next week.


Just a few pointers:

This makes A LOT so you may want to half the recipe.

Also, I did not add an entire bottle of ranch and it still tasted amazing.I cut back on the tomatoes as well. If this sounds good you may want to just judge the ingredients for yourself.

Death by Zuccotto


Can you pass me that bowl... game! Aggies won against the Longhorns at Thanksgiving and I made an awesome Italian desert using an upside-down bowl to celebrate. I used the recipe here: Zuccotto


Here is what I learned
- This desert is easy to make and is surprisingly light when you eat it. But don't be fooled... it is terribly unhealthy!
- Don't use store bought pound cake, it is too dry or "crumbable" (termed by Ben ©2010)
- Whip the cream when it is cold including the mixing bowl
- I chose to use amaretto as suggested by many others in this recipe.
- Cocoa powder is more a decoration than a necessary flavor... so don't dump it on like I did... sift it gently!
Way fun to make and eat. It was a bit out of place at Thanksgiving with all the pies, but everyone was impressed and enjoyed this Italian desert.

Victory never tasted so sweet!

Wish I Had A Second Stomach

So I took a week off from cooking something amazing this week. I figured I would showcase some of my mother's talents this week, and also include a turkey recipe.

Show cased to the right is the awesome spread of pre-Thanksgiving appetizers. We had your basic vegetable and ranch spread. We also had an amazing shrimp spread as well. But by far, my favorite appetizer was salami rapped mozzarella cheese. FAN-tastic.


To the left would be the most scrumptious Turkey on Thanksgiving day. It took about 5 hours to cook but here is the recipe.

Roman Sunset

So... I was walking around in the grocery store and I finally found what I considered to be the holy grail of bread. After shopping at HEB for almost 4 and half years now, I have never found the good bread section. That is until this weekend.

This is a very simple meal but I promise once you try it, you will be hooked.

For an appetizer, I coated some asiago cheese bread with some olive oil, Italian herbs, Parmesan Cheese, and some cracked pepper.

The main course is a chicken parmigiana flat bread sandwich on Italian herb flat bread. Coupled with arugula and cheese ravioli.

Ingredients:

2 Chicken Breasts
Flour
2 Eggs
Breadcrumbs
Vegetable oil
Flatbread
Pasta Sauce
Mozzarella Cheese

To make the Chicken Parmesan, prepare two plates, one with flour and one with bread crumbs. Then, break two eggs into a medium sized bowl. Dip the chicken in the scrambled eggs. Cover the chicken breasts with a light coat of flour, then a coat of bread crumbs. Place the chicken in a pan filled about a few millimeters full of vegetable oil. Cook the outside of the chicken until the breadcrumbs are golden brown. Then place the chicken in a pan and put in a oven preheated to 350 degrees.

Cook for about 20-30 min until chicken is cooked all the way through. slice and place on flat bread. Serve with the ravioli. Wala! Roman Sunrise.

Bacon-Wrapped Turkey Breast Stuffed with Pear Hash


It was my honorable duty to cook for 17 men. However, I was expecting about 12. No worries. With Thanksgiving on the mind, and no time to cook a whole turkey, I opted for what turned out to be a good decision. The only regret I carry from this recipe was that I didn't have the time to let the turkey soak in the brine. I used turkey breast with bones and deboned it myself, honestly... not that hard. Leave time for this recipe and it will give you some awesome holiday flavor.

Scott's MamaJama Loaded Breakfeast





This is a very simple meal.


Ingredients:

Eggs
Bacon (Any)
Sausage (Maple Link Sausage)
Toast





First, start off by cooking the bacon. The secret here is to add just a dash of pepper while skillet cooking the bacon. Turn it regularly for best results.

Next, just brown and serve the sausage.

Eggs are slightly tricky. To make truly delectable scrambled eggs, add water to the scrambling phase. I like cheese with my eggs, and the key here is to add cheese before you put in the pan. Just keep turning the eggs to cook without burning them.

Finally, toast the toast.
